Dianna's Honey & Oat Cookies Recipe

Here's a blog post from me that's a little bit different. It was posted on another site almost a year ago which no longer exists...

Healthy baking and cooking for babies and toddlers is never easy. You want to give them yummy things to tuck into, yet nothing too sugary and artificial. Below is a recipe that my then one year old absolutely loved and each cookie was ravished within seconds! It does contain honey (which is a type of natural sugar with a high GI), but no sucrose, unless you decide to add the icing sugar. I'll leave that to your judgement...


Dianna's Honey & Oat Cookies Recipe

Great for little people from 1 year old.

Ingredients

100g Oats
100g Self Raising Flour (Wholemeal)
100g Unsalted Butter
3 tbsp Clear Honey
3 tbsp Pineapple Juice
1/2 tsp Ground Mixed Spice

Method

Preheat oven to 160 degrees centigrade.
Sieve the flour into a mixing bowl.
Add the oats and ground mixed spice and mix together.
Melt the butter and honey together in a saucepan on low heat. When all melted, add the pineapple juice, making sure all is well stirred. Do not allow to boil.
Take mixture off the heat and add to the flour and oats in the mixing bowl.
Mix together well with a wooden spoon until all is lovely and gooey and smelling delicious!
Dollop small amounts onto a baking tray (I line it with a baking sheet to make sure it comes off smoothly) and press gently with a fork.
Pop in the oven for 12 - 15 mins, until just starting to turn golden and no longer as the cookies will continue to harden when out of the oven.
Allow at least 15 mins to cool down out of the oven and leave as is, or decorate / dust with icing sugar.
Keep in an airtight container as soon as properly cooled and ENJOY!
