Winter Sausage Stew
Yummy and warming for the belly any time of the year.
Makes 4 - 6 meals.
Ingredients
6 good quality sausages, cut into chunks
4 small / medium potatoes, diced into small squares
60g of Broccoli (approx), cut or torn into little florets
1 onion, diced into small squares
A can / packet of *carrot and coriander soup (approx. 500g)
A clove of garlic
1 tblsp of Sunflower Oil
Pepper
Salt
Mixed Spice
Recipe
Pop the sunflower oil into the bottom of a large saucepan and warm the pan.
When ready, throw in the sausages and stir occasionally for about 10 minutes. Sausages cooked this way tend to go a bit mushy and lose their skin -- don't worry, this is okay and perfect for this kind of dish.
Bring your hob down to simmering temperature. Add the soup, closely followed by the potatoes. Stir.
After 5 minutes, throw in the onion. Stir.
After another 5 minutes, add the garlic, a few pinches of pepper, a pinch of salt and a pinch of mixed spice. Stir. Then add the broccoli. Stir well.
Put a lid on the saucepan and let it simmer for at least 40 minutes, stirring occasionally.
Serve into bowls on its own, with pasta or rice. If eating it on its own, you may want to add a bit of cornflour to thicken it.
*You can use any soup base for this recipe.

I did something similar with pea and ham soup, and some other veg as well - yummy!
